Why we Use Sukhi’s Vindaloo Curry Sauce
Our sauce offers a well-balanced combination of flavors, including caramelized onions, tangy vinegar, and robust Indian spices, making it a perfect candidate to complement our Indian eggplant dish.
This sauce is inspired by the traditional Goan dish, known for its Portuguese influence, and will bring authentic flavors to your meal.
Indian Eggplant Curry Origins and Regional Variations
Eggplant Curry is a staple in Indian cuisine and has variations across different regions of the country. It is a popular dish in North Indian, South Indian, and Bengali cuisines, each with its unique twist.
In North India, the curry is often prepared with a rich tomato and onion base, while in South India, it may incorporate coconut milk and curry leaves for a distinct flavor. Bengali Eggplant Curry, known as “Baingan Bhaja,” features fried eggplant slices cooked in a tangy mustard sauce.
The version we’ll make today is a fusion of North Indian and South Indian influences, combining the creaminess of coconut milk with the convenience and flavors of Sukhi’s Vindaloo Curry sauce. This modern take on Eggplant Curry will provide a delightful balance of spiciness and creaminess, making it a unique and flavorful dish.
