Equipment

  • 1 Stove
  • 1 Sauce Pan

Ingredients

  • 1 pkg Suhki’s Classic Curry Sauce
  • 8 oz Pasta of choice
  • 3 oz Cherry tomatoes
  • 1 Zucchini (medium) Cut into ribbons
  • 1 Onion (medium) Cut into thin slices
  • 1 Bell pepper Cut into thin slices
  • 1 tsp Garlic
  • 2 tbsp Olive oil
  • 1 cup Coconut milk
  • Salt and pepper to taste
  • 1 sprig Parsley (for garnish)

Instructions

  • Using a mandoline, thinly slice onion, zucchini, and bell pepper into slices.
  • Cook pasta according toinstructions and drain.
  • In a medium saucepan, add olive oil and saute all sliced vegetables until lightly cooked, about 2-4 minutes.
  • Add cherry tomatoes and cook another 2 minutes.
  • Add the drained pasta, Suhki’s Curry Sauce, and coconut milk to the pan.
  • Toss all vegetables and pasta in the sauce until well-covered.
  • Sprinkle with parsley and serve immediately.
