How to Make Veggie Curry Pasta

- 1 Stove
- 1 Sauce Pan
Ingredients
- 1 pkg Suhki’s Classic Curry Sauce
- 8 oz Pasta of choice
- 3 oz Cherry tomatoes
- 1 Zucchini (medium) Cut into ribbons
- 1 Onion (medium) Cut into thin slices
- 1 Bell pepper Cut into thin slices
- 1 tsp Garlic
- 2 tbsp Olive oil
- 1 cup Coconut milk
- Salt and pepper to taste
- 1 sprig Parsley (for garnish)
Instructions
- Using a mandoline, thinly slice onion, zucchini, and bell pepper into slices.
- Cook pasta according toinstructions and drain.
- In a medium saucepan, add olive oil and saute all sliced vegetables until lightly cooked, about 2-4 minutes.
- Add cherry tomatoes and cook another 2 minutes.
- Add the drained pasta, Suhki’s Curry Sauce, and coconut milk to the pan.
- Toss all vegetables and pasta in the sauce until well-covered.
- Sprinkle with parsley and serve immediately.
