Last week on Facebook we had many great responses to our question, “What do you like to drink with Indian food?” A popular response included a variety of Lassis – As a result we’ve decided to share how to make Mango Lassi and Mint Lassi for the first installment of Cooking with Sukhi.
Lassi is a popular and traditional Indian yogurt-based drink. They can be prepared sweet or salty, vegan friendly, and include Indian spices and flavors. Lassi’s make a great afternoon snack or a special surprise for your next party.
Savory Mint Lassi
- 2 cups yogurt or soy yogurt
- 1/2 tsp salt
- 1/8 tsp black pepper
- 20 sprigs of mint
- 1/2 cup ice
- 2-4 tablespoons milk or soy milk
Using a blender first finely blend the mint and milk. Start with 2 tablespoons of milk, and add more if the mint leaves are not blending properly. Next combine all ingredients and blend until well combined. Garnish with fresh mint leaves.
Sweet Mango Lassi
- 1 cup yogurt or soy yogurt
- 1/3 cup milk
- 1 cup mango puree
- 1/4 tsp cardamom
- 1/3 cup milk or soy milk
- optional - splash of rose water
Using a blender combine all ingredients until smooth. Garnish with a swirl of mango puree or sliced mango.
