Savory Mint Lassi

Ingredients

  • 2 cups whole, soy, or non-dairy yogurt
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 20 springs mint
  • 1/2 cup ice
  • 2-4 tbsp whole, soy, or non-dairy milk

Instructions

  • Using a blender, finely blend the mint and milk. Start with two tablespoons of milk, and add more if the mint leaves are not blending correctly.
  • Add the remaining ingredients and blend until well combined.
  • Garnish with fresh mint leaves.
