A creation by Le Cordon Bleu London, ‘Poulet Reine Elizabeth,’ or Coronation Chicken, was served at Queen Elizabeth’s Coronation luncheon in 1953. The meal was sensational and well-received, consisting of young roasting chickens, carrots, a collected bunch of herbs, salt, peppercorns, and cream of curry sauce. So, while the exact origin is somewhat unknown, one thing remains certain – curry chicken salad is here to stay!

Curry Chicken Salad:
Ingredients
- 1 cup plain yogurt
- 1 ½ tablespoon Classic Indian Curry sauce
- 2 tablespoon Mango Chutney
- ½ cup bell pepper cleaned and diced
- 1/3 cup onion diced
- Salt to taste
- ½ cup cilantro chopped
- 1 lb boneless chicken breast cooked and diced
Instructions

In a medium sized mixing bowl bring the yogurt, curry sauce and mango chutney together. Using a fork or a whisk, mix the ingredients well together making a homogenous mixture.

Add salt and the rest of the ingredients.

Toss it all together until the sauce coats the other ingredients well.

At this point you can either cover the bowl with a cling wrap and pop the curry chicken salad in the refrigerator to use later (up to 3-4 houror can serve immediately.
