  • 1 package Sukhi’s Coconut Curry
  • 1/2 cup peppers chopped
  • 1/2 cup onions chopped
  • 1 cup carrots chopped
  • 1 can pumpkin
  • 1 can full-fat coconut milk
  • rice optional for serving
