Ingredients
- 1 can Chickpeas (Drained)
- 1 tbsp Paprika
- 1 tbsp Olive Oil
- 1 tbsp Garlic
- 3 cups Kale (Cut and Dried)
- 1 package Sukhi’s Curry Sauce
- 1/4 cup Lemon Juice
- 1/2 cup Olive Oil
- Croutons (Optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 375F. Prepare a baking sheet with parchment paper or aluminum foil.
- In a medium bowl, mix chickpeas, olive oil, paprika, garlic, salt, and pepper together until evenly coasted.
- Layout spiced chickpeas in a single layer on a baking sheet. Place in oven for 35-40 min, shaking the pan halfway through. Remove from oven and let cool.
- In a small bowl, mix Suhki’s sauce, lemon juice, and olive together until a smooth dressing forms.
- In a medium bowl, massage kale and curry dressing together. Let sit until chickpeas are cool.
- Add chickpeas to kale salad and top with crushed croutons.
