Sukhi's Kale Chickpea Salad: A Curried Twist on Your Greens

Ingredients

  • 1 can Chickpeas (Drained)
  • 1 tbsp Paprika
  • 1 tbsp Olive Oil
  • 1 tbsp Garlic
  • 3 cups Kale (Cut and Dried)
  • 1 package Sukhi’s Curry Sauce
  • 1/4 cup Lemon Juice
  • 1/2 cup Olive Oil
  • Croutons (Optional)
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375F. Prepare a baking sheet with parchment paper or aluminum foil.
  • In a medium bowl, mix chickpeas, olive oil, paprika, garlic, salt, and pepper together until evenly coasted.
  • Layout spiced chickpeas in a single layer on a baking sheet. Place in oven for 35-40 min, shaking the pan halfway through. Remove from oven and let cool.
  • In a small bowl, mix Suhki’s sauce, lemon juice, and olive together until a smooth dressing forms.
  • In a medium bowl, massage kale and curry dressing together. Let sit until chickpeas are cool.
  • Add chickpeas to kale salad and top with crushed croutons.
