Preheat oven to 375F. Prepare a baking sheet with parchment paper or aluminum foil.
In a medium bowl, mix chickpeas, olive oil, paprika, garlic, salt, and pepper together until evenly coasted.
Layout spiced chickpeas in a single layer on a baking sheet. Place in oven for 35-40 min, shaking the pan halfway through. Remove from oven and let cool.
In a small bowl, mix Suhki’s sauce, lemon juice, and olive together until a smooth dressing forms.
In a medium bowl, massage kale and curry dressing together. Let sit until chickpeas are cool.
Add chickpeas to kale salad and top with crushed croutons.
