Ingredients

  • 4 slices sourdough or sandwich bread
  • 2 tbsp butter softened
  • 2 –3 tbsp cilantro chutney
  • 4 slices of cheese cheddar, mozzarella, or pepper jack work well
  • 1 small tomato thinly sliced (optional)
  • Pinch of salt

Instructions

  • Spread butter on one side of each slice of bread.
  • Flip the slices and spread cilantro chutney on the unbuttered side of two of them.
  • Layer on cheese and tomato slices (if using), then top with the remaining bread, chutney-side down.
  • Heat a skillet over medium heat. Place sandwiches in the skillet and cook 3–4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
  • Slice and serve immediately. Add extra chutney on the side for dipping.
