Spread butter on one side of each slice of bread.
Flip the slices and spread cilantro chutney on the unbuttered side of two of them.
Layer on cheese and tomato slices (if using), then top with the remaining bread, chutney-side down.
Heat a skillet over medium heat. Place sandwiches in the skillet and cook 3–4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
Slice and serve immediately. Add extra chutney on the side for dipping.
Optional Add-ons: Caramelized onions, sliced jalapeños, or a fried egg for a brunch twist.
