Cinnamon isn’t just for toast. As you might have noticed, many of Sukhi’s spice mixes and chutneys and pickles include cinnamon, which offers both a hint of heat as well as sweetness. Native to the island of Sri Lanka, which produces the majority of the world’s cinnamon, cinnamon trees also now grow in India, Indonesia, Brazil, Vietnam, and Egypt. The thin inner bark of the tree is what is harvested and used as a spice. Cinnamon is also prized for its medicinal values, including the prevention of colds and to improve energy. Cinnamon’s unique flavor is due to an aromatic essential oil that makes up to 1 % of its composition.
“True” cinnamon often refers to Ceylon cinnamon, which is sweeter and more refined as opposed to the more commonly available Cassia or Chinese cinnamon. As with most spices, they are best stored sealed and in the refrigerator or freezer.
