Green Beans and Coconut Curry

Ingredients

  • 1 tbsp Coconut oil
  • 1/2 Medium red onion Finely chopped
  • 1 pkg Sukhi’s Coconut Curry Package
  • 2/3 cup Coconut milk Split in half
  • 1 lb  Green beans Cut into thirds
  • 1 Lime
  • Salt and pepper to taste
  • Cilantro (for garnish)
  • Rice or naan (optional) for serving

Instructions

  • Heat the coconut oil in a large pan over medium heat.
  • Add the chopped onion and garlic. Cook for 2-3 minutes.
  • Add in Sukhi’s sauce and pour ⅓ cup of coconut milk.
  • Add the green beans to the pan and stir to combine.
  • Reduce heat to low, cover the pan, and simmer for 20-25 minutes or until the vegetables are tender.
  • Season with salt and freshly ground black pepper to taste.
  • Just before serving, squeeze lime and sprinkle cilantro over the curry.
  • Serve your favorite rice or naan. Enjoy!
