What is Curry?

A creation by Le Cordon Bleu London, ‘Poulet Reine Elizabeth,’ or Coronation Chicken, was served at Queen Elizabeth’s Coronation luncheon in 1953. The meal was sensational and well-received, consisting of young roasting chickens, carrots, a collected bunch of herbs, salt, peppercorns, and cream of curry sauce. So, while the exact origin is somewhat unknown, one thing remains certain – curry chicken salad is here to stay!

Curry Chicken Salad:

Ingredients

  • 1 cup plain yogurt
  • 1 ½ tablespoon Classic Indian Curry sauce
  • 2 tablespoon Mango Chutney
  • ½ cup bell pepper cleaned and diced
  • 1/3 cup onion diced
  • Salt to taste
  • ½ cup cilantro chopped
  • 1 lb boneless chicken breast cooked and diced

Instructions

  • In a medium sized mixing bowl bring the yogurt, curry sauce and mango chutney together. Using a fork or a whisk, mix the ingredients well together making a homogenous mixture.
  • Add salt and the rest of the ingredients.
  • Toss it all together until the sauce coats the other ingredients well.
  • At this point you can either cover the bowl with a cling wrap and pop the curry chicken salad in the refrigerator to use later (up to 3-4 houror can serve immediately.
